Little Breakfast Soufflé

I noticed that I have one follower. It's a little exciting. I can only hope that more than one person is stopping by at this page and reading my cooking experiments. Hopefully more people will become my followers. I wish I could know how many people stopped by and actually read my blog. I look forward to the day in which I will find a comment.

Last week, right after I had posted about the baked french toast,  I was explaining my blog to my sister and she said, "why not make it song of the week and quote of the week?" She is right. I only post once a week. I would like to post everyday but I need money to get the ingredients. I am not working and must rely on my parents for  providing the ingredients. Furthermore, I think I would be too lazy to write everyday but I am working on making sure I post at least once a week. Hopefully, this blog wont fade into obscurity.

Book I'm reading: The Dark Tower VII: The Dark Tower by Stephen King. Still with this book. Not really enjoying it as much as I thought but I will finish it.

Song from Pandora: Lacuna Coil - Aeon. I have never heard of this song but it seems okay. I don't think it applies in any aspect of my life.

Song from iTunes: Muse - Apocalypse Please. Unfortunately my iTunes was not in shuffle. I didn't notice and this is the first song to play since I have my iTunes in order by Albums. I just love how it starts, so powerful. Maybe something in my life needs to end or I am waiting for some sort of miracle or something to pull me forward. This sort of reminds me of this line from Fight Club, when the Tyler Durden or the narrator says that in order to make myself better I would have to destroy myself. I guess reach rock bottom and then reach up or fix myself after destroying myself. I'll think more on this. Maybe comment on it later after some reflection.

Ingredients:
  1. Cooking Spray
  2. one egg
  3. two egg whites
  4. 1/3 cup all-purpose flour
  5. 1/3 cup low-fat milk
  6. pinch of salt
  7. 3 tablespoons of reduced-fat Swiss or cheddar cheese, grated
  8. two tablespoons diced deli ham.

In the picture above I am missing the cooking spray. The book says that this is not a Soufflé "in the strictest sense." Not really sure what that means but okay. This is from the breakfast section. Though I ended making this at 11PM at night. Weird, but it was fun.

Directions:
  1. Preheat the oven to 400 F. Coat 6 muffin tins with Cooking spray.
    • I don't have a muffin tin but I bought Baking Cups and they worked okay.
  2. Whisk vigorously in a bowl the egg, egg whites, flour, milk, and salt.
    • This is where I went wrong. I did whisk everything but I also added the cheese and the ham. Which wasn't really diced i just ripped it to shreds with my hands. They were clean. So no worries about dirty hands and contaminated food. I whisked everything. I was just not paying attention. I think I was having too much fun throwing stuff into the bowl where I was mixing things.
  3. Fill each muffin tin 2/3 full with batter and sprinkle with 1/6 of the cheese and 1/6 of the ham.
    • Since everything was together I just filled the cups 2/3rds of the way.
  4. Bake 12 to 15 minutes until the soufflés are golden brown and beautifully puffed. Serve immediately.
    • With my mother's help we managed to pull it out. Actually she did most of the work. I just watched her not burn herself. I made my mother taste it first. Terrible I know. I should have been the first one to taste it but I didn't feel like eating it until she decreed it tasted good. It actually did but it needed to have put a bit more salt. But my dad can't have too much salt in his diet so its all good.

Baked French Toast with Sugar-Free Syrup

It's been a while since I have written and for that I apologize. I may have said, not too sure and don't feel like checking at this moment,  that once a week I'd update but I have been super lazy. It has gotten astronomical and disgusting the level of laziness I have reached. However, I hope to start this and stick with it. I may have to beat or punish myself if I don't update at least once a week. Now onto the Recipe and my results.

Song from iTunes: My Chemical Romance - I'm not Okay (I Promise). I want to say that this is my music list trying to tell me I'm not really okay. Which I'm not. I need to stop being so lazy and get my s*** together.

I like to believe that randomly listening to my iTunes or Pandora can tell me something. Again I am a little crazy and just a little odd but its never a dull moment. I shall try to let that show through my writing and I hope people are reading this, even if they don't comment or follow.

Ingredients:
  1. Cooking spray.
  2. One cup low-fat milk.
  3. Two Eggs
  4. One egg white
  5. 1/4 cup Splenda
  6. 1/2 teaspoon Cinnamon
  7. Six slices of stale bread (or Fresh Bread lightly toasted)
  8. Three tablespoons sugar free syrup or spoonful of fruit spread
Sugar-Free Syrup
  1. 1/2 cup, pluse 1 tablespoon water
  2. one teaspoon cornstarch
  3. two tablespoons fruit spread
  4. one tablespoon splenda

Those are the ingredients I used. I used Wheat bread because that is what we have at home and the brown sugar because we had no splenda and I hate splenda to be honest.

Directions:
  1. "Preheat oven to 350 F and coat the cookie sheet with cooking Spray."
    • Not so bad. Didn't use a cookie sheet but a crystal glass thing used for making lasagna.
  2. "Whisk together in a large bowl the milk, eggs, egg white, splenda and cinnamon. Cut the bread slices in half to make 12 pieces. Dip the slices in the batter and let them soak for 10 seconds."
    • I whisked by hand and it wasnt so bad for my first cooking experiment but there was a point where I was worried that the egg would not mix well. Also with my mother's help, she removed the egg white. I could have done it but she was hovering at the entrance amused and staring at me. I ended up using Brown sugar because I did not have enough Splenda and besides Brown sugar is better than splenda, for me. But in the future I will try to have a box of splenda near by so as to follow the recipe. I did not cut the bread. I just took three slices of wheat bread and dipped them into the mix.
  3. "Arrange soaked bread on the prepared cookie sheet and bake 12 to 15 minutes. Carefully flip the slices halfway thorugh cooking."
    • It wasn't too difficult to place the sheet inside the oven, but I was afraid of turning the slices. That is when my mother's hovering became useful. I asked her to turn them over because I was afraid of burning myself.
Sugar Free Surup
  1. "Bring 1/2 cup water to a boil."
    • Easily done. No problem there. I did this while I waited for the bread to finish baking.
  2. "Add 1 teaspoon cornstarch dissolved in one tablespoon cold water and return to a boil. The cornstarch and water will thicken to a syrupy texture."
    • No problem, though I was worried it wouldn't taste good.
  3. "Stir two tablespoons of your favorite no-sugar added fruit spread plus one tablespoon Splenda into the boiling liquid and stir until disolved."
    • I used Polaner Sugar Free with Fiber. It was the strawberry preserves one. Tastes nasty by itself.
    • Once it was all cooked and done, the sugar-free syrup tasted really good. Though it still had some sugar not sure why its called sugar free.

Diabetes Cookbook

The book I'm using to create all these delicious recipes is from Barnes and Noble and is called "Diabetes Cookbook."
It Seems to be a decent cookbook. Well I wouldn't know but its the first one I'm using and its easy to read and the instructions are clear and simple. As I said before I will include a quote of the day, two songs randomly picked and the book I am currently reading. Let me explain how my music choices are picked. On my iTunes I have almost 1500 songs. I always have it on shuffle for I enjoy the randomness. On Pandora I have 12 Stations. They are: Pop, Hip-hop/Urban, Portishead, Juan Luis Guerra, Alternative, Rock, R&B/Soul, Epic Soundtracks, Glee, Country, and Delerium. I try to have a little bit of everything. All of those stations I have under quickmix, so it shuffles through them like on iTunes.

Hello!

Welcome to Annie's Kitchen. My name's not really Annie. That's just the name I give strangers at a bar, so I don't have to hear them butcher my name. Also they are strangers, I won't see them again and I don't pick up people at bars. Though if I'm in a large crowd, I will just tell them my name. Furthermore, I'd like to remain anonymous. I'm sure that if any of you tried, you would find me but please don't. I don't need to be more paranoid that I already am. Just read my blog and I'll read yours. Comment if you want.
The goal of this blog is to cook or prepare meals taken from a diabetic cookbooks. I have three. I have no cooking experience and so I hope that the meals come out decent. you maybe asking yourself why a diabetic cookbook. Both of my parents are diabetic and for now I am in the clear and I hope to remain that way. Hence, I will adopt a more healthier lifestyle.
The way this blog is going to work is that, once a week, I 'll prepare the meals and post it. Along with my posts I'll put pictures of the ingredients, the finished product, the taste and just what the experience was like for me. I will include a quote of the day, two random songs picked from Pandora and my itunes on shuffle. Also the book I am currently reading.
