Basic Bran Muffins

I know it’s been such a long time since I have posted anything. I am sorry. Truly. Certain emergencies kept popping up and then, when everything had settled, my laziness overpowered me and left me breathless. Instead of just fighting it, I gave settled in its arms like falling into the embrace of an old lover. My fault entirely, I enjoy my laziness. But I have managed to beat it back and am posting the latest thing I made.

I have no idea if anyone has bothered to read my blog. Granted, it has been a long time since I have posted. I only hope, if you manage to find your way here, that you take the time to look at the latest post.

This week, will be a trying one. Let us hope that I am strong and able to resist jumping into the fire. I am praying for strength and for these muddled thoughts and emotions to clear up or disperse and leave me in peace.

Book: Frankenstein by Mary Shelley. I am rereading it, though slowly taking my time. It’s a great book and one that everyone should read, at least once.

iTunes’s song: Snow Patrol – Set Fire to the Third Bar feat. Martha Wainwright. It is a beautiful song and Martha’s voice has a sort of haunting quality to it. It speaks to my confused heart. I am not sure anymore of certain things. But the only thing I can be sure is to remain true and faithful. It’s the best policy.

Pandora’s song: 30 Seconds to Mars – The Kill. Not a huge fan of this band, but this song and another one are my favorite. Wonder what the universe, yes the universe, is trying to tell me by playing this song. I do feel as if I have disconnected from myself. A lot of personal choices haven’t been the best or maybe I am still upset at the outcome. Life has become disorganized and I am not sure how to fix it without burning everything up.

On to the recipe:

Ingredients:
  1. Cooking Spray
  2. 1 cup all purpose flour
  3. 4 tablespoons splenda
  4. 2 teaspoons baking powder
  5. pinch of salt
  6. 1/3 cup bran cereal (such as all bran)
  7. 2 eggs
  8. 1/4 cup of low-fat milk
  9. 1/4 cup unsweetened applesauce
  10. 2 tablespoons vegetable oil
  11. 1 teaspoon vanilla extract.

Directions:
  1. Preheat oven to 400 F. Lightly coat a 12-cup muffin pan with cooking spray.
    • Again I used Baking cups because I don't have a muffin pan.
  2. Sift together flour, splenda, baking powder, and salt in a medium size bowl. Add bran cereal and mix well.
    • This was a bit hard to do. To make sure they all mixed well, since they are dry materials. I couldn't just grab a whisk and mix it together with force. Actually I did use the whisk but lightly and mixed them. I called my mother in to make sure that they were mixed well. She said yes and I was glad.
  3. In a separate large bowl, whisk thoroughly eggs, milk, applesauce, oil and vanilla.
    • This is easily done. Just using the whisk and brute force to mix them well. Even if they don't want to come together.
  4. Gently fold the dry mixture into the wet mixture. Mix gently until ingredients are just combined. A few lumps are fine.
    • I tried to be gentle but the kitchen was getting hot. It is a small kitchen and they give insane heat in my building. That mixed with the oven being on was making me slightly sweaty. Eww, I know but I just tried to gently pour in the dry mixture but then just sort of threw it in there and mixed as gently as I could until it looked good to my eye.
  5. Fill coated muffin tins 2/3 full. At this point you can top the muffins with a variety of flavorings, such as grated apples and cinnamon, diced bananas and walnuts, chopped raisins and cranberries, or semisweet chocolate chips and pecans.
    • After filling the muffin tins, I sprinkled some cinnamon. As they baked the entire apartment smelled of cinnamon.
  6. Bake 15 to 18 mins until the tops of the muffins spring back when gently pressed. Cool and serve.
    • I put the muffins in the hot oven and left them there for 15 mins. They were cooked and all pretty. Though my mother was the one to get into the oven and remove them. I'm still afraid of getting burned and we have no gloves or stuff. Should look into getting one.
The bran muffins were delicious. My only complaint was that they made me go to the bathroom. A lot. I guess its because the bran cereal was high in fiber. That thing just ran through me. So, if you are unaccustomed to eating something with a lot of fiber, I would recommend that you eat it at home and are planning to stay at home.

The next two recipes in the book I will not be trying because one contains raisin's and the other one mushrooms. I hate raisins and have never eaten mushrooms. Also no one in my family eats mushrooms. I will post the two recipes, in the chance that someone, who is reading this blog, will like to try it out. The next recipe I am trying is "Sweet potato pancakes with orange honey syrup.
