Back with Blueberry Pancakes!

I'm back after a long hiatus. I did not want to be gone but circumstances forced me to do so. I even have a tale to share with you.

Last week I took the LIRR by myself. This was not the first time I have taken it and I have travelled to other countries. But those have been family trips or I was with friends. This was the first time that I ventured out by myself. It was scary and exhilarting. As I dressed that morning, it seems like any other day. Taking the train was like every other time. However, once I got to the LIRR, I became confused and a bit lost. I was scared I wouldn't find the ticket booth. Fortunately, I got my head together and found the place I had passed countless times. I had forgotten how crowded it can get. I purchased my ticket, learned where I was supposed to transfer and joined the large mass of people looking up at the electronic board, willing it to change with our eyes. As I waited I grew worried again but excitement was dancing inside my vains.

Once the train arrived, I double checked to make sure I was on the correct platform, I entered the train, sat in the middle and looked out the window listening to my iPod. My eyes devoured the sights. The concrete jungle I left behind was still replaced with concrete but I didn't see the usual skyscrapers. The sky was a baby blue shade, clouds seemed immobil but then I couldn't be sure if they were moving for my train was moving. When the train slowly moved or setteled into a set speed. I became aware that it rocked from side to side. Everytime the train stopped, I would carefully pay attention to the name of the stop to make sure I wouldn't miss it.  The ride was two hours long and my friends were waiting for me at the station. It was great, now onto the pancakes.

Book: Reading the play "Othello" by William Shakespeare. Just started it. I have read it before but I'm re-reading it for no good reason.

iTunes: Kanye West - Flashing Lights. Great song with a great beat. I love walking while having this song play on my iPod.

Pandora: Daughtry - No Surprise. About at dying relationship. Makes me sad hearing it.

Ingredients:
  1. 1 Cup white whole wheat flour
  2. 2 Tbsp ground flaxseed
  3. 1/2 tsp baking powder
  4. 1/4 tsp baking soda
  5. 1/2 ground cinnamon
  6. 1/2 tsp ground ginger
  7. 1/4 tsp ground nutmeg
  8. 1/8 tsp salt
  9. 1 cup buttermilk
  10. 1 egg white
  11. 1/2 pint of blueberries
Servings: 4
Per Serving: 196 cal, 8g fiber, 3g fat, 1g sat fat, 292mg Sodium













Directions:
  1. Preheat griddle over high heat.
    • No problem.
  2. Combine flour, flaxseed, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in large bowl. Make well in center of dry ingredients and add buttermilk and egg white. Whisk until combined.
    • I couldn't find white whole wheat flour, so I used whole wheat flour. Not too sure if it would have affected the taste or not.
    • I could not find ground flaxseed, I found the seeds at first I thought to mash them down as I would with garlic in a pilon thing but that didn't work. Luckily we had a sort of food processor which helped grind them down after a couple of tries.
    • Butter milk tastes terrible. The one we had was one percent and it was just yucky.
  3. Coat griddle with cooking spray. Pour 1/4 cup batter per pancake onto griddle and top each with 6 or 7 berries.
    • I used butter instead of cooking spray. I feel that the pancakes come out better that way.
  4. Cook 3 to 4 minutes, or until small bubbles appear on top of pancake. Flip and cook 3 to 4 mintues longer, or until pancakes are cooked through. Serve immediately with sugar free maple syrup, if desired.
    • I was not a fan of this. My mom and dad both liked it but I hated the taste of it. Also I'm not a huge fan of blueberries. Yuck. Not something I want to make again, though my sister wants to try it.
    • I forgot to take a picture of the finished product. If I repeat this recipe again, I'll try to remember to take a picture of the finished product.

New Color and Update

The color for the month of July will be a shade of orange. Not sure why but this month makes me think of that color. It is not narrowed down to a specific shade of orange. Maybe because July can get so hot. So I guess I associate orange with heat.

So far it has been a good week. My birthday passed. It was okay. Spent most of the day with family and then later on with friends. Many people wished me a HBD. A few dared to come out. I was disappointed that two people didn't show but that is life and I was thankful for those who were there.

Unfortunately I won't be able to post meals for a bit. Not because I don't want to or am taking a vacation from this blog. That is not the case. The problem is the lack of funds at home. Money is tight this month. Hopefully it will be resolved quickly. I don't know when but I hope and pray for it.

Book: A Kiss of Shadows by Laurell K. Hamilton. I didn't want to restart this series but I haven't gotten the next book on the Anita Blake series.

iTunes: Casta Diva (extrait de l'opera Norma) - Angela Gheorghiu/ London Symphony/ Orchestra. This is from the 2046 movie soundtrack. Great song and an amazing movie. One that I would recommend but keep in mind that its the third movie in a trilogy. Also the director's style might be confusing.

Pandora: Making Christmas - Danny Elfman. From the soundtrack of A Nightmare Before Christmas. An amazing movie that I love watching over and over. I think everyone should go see it if they haven't.

I found this to be so true and beautiful. We have to continue giving birth to ourselves or else we will drown. I need to read some of his stuff. Its on my to-do list.
